Baked Aloo Gobi (Dump-and-Bake)
Ingredients:
- 1 medium cauliflower, cut into florets
- 2 medium yellow potatoes, cut into bite-sized cubes
- 2 tbsp water
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 tsp red chili mirch
- ½ tsp mustard seeds
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp ground ginger (or fresh minced ginger)
- 1 tbsp lemon juice
- ½ tsp mustard seeds (optional, for extra flavor)
- ½ cup tomatoes, cut (optional, for added moisture)
- Fresh cilantro for garnish
Instructions:
Preheat Oven: Set your oven to 400°F (200°C).
Prepare Veggies: In a large bowl or directly in a baking dish, toss the cauliflower and potatoes with water.
Season: Add all the spices, salt, and lemon juice. Toss well to coat everything evenly.
Bake: Spread everything in a single layer in a baking dish. Cover with foil and bake for 25 minutes.
Uncover & Roast: Remove the foil, stir the vegetables, and bake uncovered for another 20-25 minutes, or until the potatoes are tender and cauliflower is golden.
